Grilled Chicken with Pineapple Mango Salsa and Fried Zucchini
Ingredients:
- 2 boneless, skinless chicken breasts
- 1/4 cup white distilled vinegar
- 1/2 cup + 2 tbsp olive oil
- 1 cup pineapple juice
- 3 tbsp lemon juice
- 2 tbsp lime juice
- 2 tbsp parsley
- 2 tbsp basil
- 1 1/2 cup pineapple diced
- 1/2 mango peeled and diced
- 1/2 cup mandarin oranges diced
- 1 cup uncooked rice
- 1 1/2 cup water
- 1 zucchini cut into 3-inch long by 1/4-inch wide strips
- 1/2 cup all purpose flour
- 1 tsp onion powder
- 2 tsp garlic salt
- 2 tbsp butter
First make the marinade for the chicken by combining the vinegar, 1/2 cup olive oil, 1/2 cup pineapple juice, 2 tbsp lemon juice, 1 tbsp lime juice, 1 tbsp parsley and 1 tbsp basil. Mix these together and set aside.
Next make the pineapple mango salsa so the flavors can marry in the fridge while you cook. In a small bowl combine 1 cup pineapple, mango, mandarin oranges, 1 tbsp lemon juice, 1 tbsp lime juice, 1 tbsp parsley and 1 tbsp basil. Mix and then place in the fridge.
Start the rice. In a medium saucepan combine rice, water and 1/2 cup pineapple juice. Bring the rice to a boil and then cover and cook over low heat for about 20 minutes (read your rice package to get the cooking time).
Begin grilling the chicken on medium-high heat. Marinate the chicken often using a brush. We used an indoor grill that sits right on the stove top but no matter what grill you use, the chicken should only take 20-25 minutes.
Combine the flour, onion powder, and garlic salt in a shallow bowl. Sprinkle the zucchini with a little water then coat it with the flour mixture. Place 2 tbsp olive oil in a sautee pan and then arrange the zucchini in the pan. Cook the zucchini on medium heat for about 3-4 minutes per side until it they are golden brown.
Remove the chicken from the grill when done and top with the pineapple mango salsa. Once the rice has finished, put in 2 tbsp butter and 1/2 cup of the diced pineapple and mix. (I also drizzled some of the mandarin orange juice over the rice).
So what did we think? I was pleasantly surprised since I didn't think I liked pineapple! I though that everything was delicious. The chicken turned out awesome and the pineapple salsa was so summery and perfect! I thought that the mandarin oranges complimented the pineapple really well. The pineapple rice was amazing. I loved the little kick the pineapple juice gave the rice and the chunks of pineapple were so juicy! Frank was a big fan of the fried zucchini but I thought I overcooked it a little (so I adjusted the cooking time in the recipe). It was just a little too mushy but I am sure next time it will be wonderful! Here we are after we finished eating - happy customers!
And her second favorite thing is to give them treats which is always a 20 minute and 50 treat adventure. She must give E-V-E-R-Y kitty a treat. And you have to help her because the cats have learned to gang up on her and steal them. If she goes to give Rio a treat and he is too slow and Fenway snatches it (which he does often), she must give everyone 2 because now Fenway had 2. Like I said, an adventure. Our life is one big adventure :o)
